  1. 1 lbGrass Fed Ground Beef
  2. 1 mediumOnion
  3. 15 ozChili or Kidney Beans, w/ liquid
  4. 15 ozBlack Beans, w/ liquid
  5. 15 ozWhole kernel corn, w/ liquid
  6. 8 ozTomato Juice or Sauce
  7. 2 cupWater
  8. 14 ozDiced Tomatoes
  9. 10 ozDiced tomatoes with green chilies
  10. 1 packagesTrader Joe's Taco Seasing (estimate)
  11. 2 ozBlack Olives drained & Sliced
  12. 2 ozGreen Olives drained and sliced (optional)
  13. Garnish
  14. 1Shredded cheddar, green onion, tortilla chips, sour cream, etc.

Steps

  1. 1

    Brown ground beef and onion in a large skillet and drain grease.

  2. 2

    Add beef and all ingredients to a large pot and bring to a boil. Simmer for 1 hr. Add water if too much liquid has evaporated during simmer. Can also be cooked in crock pot on low for 7-8 hrs.

  3. 3

    Garnish and eat up!
