Ingredients

  1. 1 cuprice flour (about 120 grams)
  2. 3/4 cuptapioca flour (about 90 grams)
  3. 1 cupcoconut milk (about 240 ml)
  4. 1 cupgranulated sugar (about 200 grams)
  5. 1 teaspoonsalt
  6. 2 1/2 cups(about 500 grams) ripe Thai bananas (or ripe bananas)
  7. 1/2 cupshredded fresh coconut (white part only)
  8. ==Topping
  9. 3/4 cupshredded mature coconut (about 60 grams)
  10. 1 pinchsalt

Steps

  1. 1

    Mash the bananas (I like to leave them a bit chunky for texture). Mix the shredded coconut with a pinch of salt and set aside for the topping.

    Combine the rice flour and tapioca flour. Add the coconut milk and knead or mix until smooth. Add the sugar, salt, mashed bananas, and shredded coconut. Mix until well combined.

    Wrap the mixture in banana leaves, or spoon into small heatproof cups or a tray. Sprinkle the topping coconut over the batter. Steam over high heat for 15-20 minutes, or until set. Remove and let cool.

    I steamed mine in a tray and cut it into bite-sized pieces.
