Mix flours together ~ Melt yeast in 1 Tbsp. hot water ~ Put 2 C. flour mix in scalded mixture, then add yeast. Mix together ~ cover & let rise until dough backs into itself (approx. 2 hrs.) Add rest of flour mixture & butter ~ kneed until bounces back. Spray bowl with non-stick spray & cover ~ let rise until doubled. Punch down & spread about 1/2" thick on floured surface & cut in rounds. Sprinkle cookie sheet with corn meal ~ Set rounds on cookie sheet ~ Cover & let rise until doubled. Heat griddle to fairly hot ~ Cook until light brown ~ Turn every 3 min. for 13 min. Using 2 forks to separate, Toast & serve
