  1. 1/2Chicken Breast
  2. 1 sliceCooking Onion
  3. 1/2 tspCoconut Oil
  4. 1/2 tspThai Red or Yellow Curry Paste
  5. 3 tbspCoconut Milk
  6. 1Chilie Flakes
  7. 1/2 tbspFish Sauce
  8. 1/2 tspCorn Starch
  9. 2 cupSpinach

20 mins
  1. 1

    Cook chicken and onions for 12 min with curry paste and oil

  2. 2

    Add coconut milk, fish sauce, chiles and corn starch. Simmer for 5 min

  3. 3

    Add spinach, coat in sauce and cook for another 3-5 min to wilt spinach
