Line a deep 20cm round cake tin bringing paper 5cm above the edge of the tin.

Chop mixed fruit and dates.

Combine in saucepan with butter sugar spice and water/juice.

Stir over low heat until butter is melted.

Bring to boil.

Boil uncovered for 3 mins.

Remove from heat allow to become completely cold.

Add sherry beaten eggs and marmalade.

Mix well.

Add sifted dry ingredients. Mix well.

Spread evenly into prepared tin

Bake in a mod to slow oven for approx 2hours.

Cover with aluminium foil til cold.

Remove from tin.

Re-wrap in foil until required.
