Ingredients

1 cupFlour
1 cupYellow cornmeal
1/2 tspSalt
1 tspBaking soda
2 tspBaking powder
1/3 cupBrown sugar
3 tbspOil
1 1/2 cupButtermilk (or milk + 2Tbsp vinegar)
2Eggs

Steps

Preheat oven to 425

Pour liberal amount of oil into cast iron skillet & place in oven while preheating.

Whisk together all ingredients in a bowl.

Remove pan from oven & pour batter into hot oil.

Put back in oven for 20 minutes.

Check center with a knife, if it comes out clean it's done, if not give it 5 more minutes and try again.
