Split Pea Saute & Potato Delight

I absolutely love split peas and potatoes. Combing the two just seemed like a no brainer! I got hungry on a Saturday afternoon, too lazy to go to the grocery store started looking around the kitchen for a meal idea. Adding the pumpkin pur?e was a last minute decision. Had it left over from a vegan chocolate cake I made recently. Turned out to be a great addition!

Ingredients

  1. 1 cupSplit yellow peas
  2. 1/2 cupPotato Puree
  3. 1/2 largeYellow Onion
  4. 2 tbspLatin Adobe Seasoning (Gaia's Essence)
  5. 1 tbspCajun Seasoning (Gaia's Essence)
  6. 2 tbspSea Salt
  7. 4 cupWater
  8. 4 cupVegetable Broth (use as much as needed to keep covered)
  9. 3 mediumRed Potatoes
  10. 2 tbspCoconut Butter
  11. 1 tbspPepper

Cooking Instructions

  1. 1

    Place potatoes in a medium pot cover with water let cook until tender

  2. 2

    Add 4 cups of water to small pot

  3. 3

    Add spilt yellow split peas

  4. 4

    Add onion

  5. 5

    Add Latin Adobe, sea salt, and Cajun seasoning

  6. 6

    Bring to a boil

  7. 7

    Add vegetable broth as needed to keep spilt peas covered

  8. 8

    Add pumpkin puree

  9. 9

    Reduce fire to simmer stirring often

  10. 10

    Cover slightly

  11. 11

    In a bowl cut up potato mash with coconut butter, add pepper & mix. Spoon in desired amount of split saut?. . Add more seasoning as desired. Enjoy it's banging!
