Mix well White egg, Butter, Salt and pepper in a small bolw. Heat the pan over high heat add the canola oil. Reduce to the middium heat pour mixed egg in to the pan and stir it until a little bit cooked. Fold the egg in to semicircle shape.

To serve. Sprinkle the rocket salad leaf and cherry tomato on the white omlet. Spread around with olive oil, balsamic reduction, salt and pepper.
