This recipe was one of my favorite dishes when I was growing up. Grandma used to make them when grandpa went to deer camp because he didn't like them. Comfort food at it's best.
Potato Dumplings with Bacon and Onions
This recipe was one of my favorite dishes when I was growing up. Grandma used to make them when grandpa went to deer camp because he didn't like them. Comfort food at it's best.
Steps

Bring a large pot of salted water to a boil.

Peel potatoes and shredd (pressing out excess liquid).
- 3
Add eggs and the salt and pepper to a separate bowl and wisk.

Pour egg mixture over potatoes and toss to coat the potatoes.

Add the flour, one cup at a time, mixing with yours hands until a thick dough forms.

Coat hands with flour and roll dough into balls a little smaller than a golf ball. Place on a cookie sheet to ease transitioninto boiling water.

When all dumplings are formed, drop into boiling water. Dumplings will sink and resurface when done. Approximately 20 minutes.

While dumplings are boiling, saute onions and bacon until partially cooked.

Add drained dumplings to the bacon and onions and continue cooking until onions are translucent and bacon and dumplings are browned.
