Ingredients

  1. 1/2 cupOil-packed sun dried tomatoes.
  2. 2 tbspreserve oil
  3. 8 ozArtichoke hearts, quartered.
  4. 2 clovegarlic, minced
  5. 1 1/4 cupChicken broth.
  6. 8 ozpasta
  7. 1/4 cupparmesan
  8. 2 tbspFresh basil, chopped.
  9. 2 tbspFresh italian parsley, chopped
  10. 8 ozMozzarella, cubed
  11. 1 pinchSalt and pepper.

  1. 1

    Heat the oil reserved from the tomatoes in a heavy, large frying pan over medium-high heat. Add the sausages and cook until brown, breaking up into bite-sized pieces with fork, about 8 minutes.

    Transfer the sausage to a bowl.

  3. 3

    Add artichokes and garlic to the skillet & saute over medium-high heat until the garlic is tender, about 2 minutes.

  4. 4

    Add the broth and sun-dried tomatoes.

  5. 5

    Boil over medium-high heat until the sauce reduces slightly, stirring occasionally, about 8 minutes.

  6. 6

    Meanwhile cook the pasta until tender, about 8 minutes.

  7. 7

    Drain the pasta.

  8. 8

    Add the pasta, sausage, parmesan, basil and parsley to the artichoke mixture.

  9. 9

    Toss until the sauce is almost absorbed by the pasta.

  10. 10

    Stir in the mozzarella.

  11. 11

    Salt and pepper to taste.

  12. 12

    Search with parmesan.
