  1. Vanilla Cupcakes
  2. 150 gramsbutter, softened
  3. 1 1/2 cupcaster sugar
  4. 2eggs
  5. 2 1/2 cupself-raising flour
  6. 1 1/4 cupmilk
  7. 2 tspvanilla essence
  8. Buttercream Icing
  9. 200 gramsbutter, softened
  10. 3 cupIcing Sugar
  11. 1/4 tspvanilla essence
  12. 3 tbspmilk
  13. 1Raspberries, sugar flowers or sprinkles to decorate.

    Preheat oven to 190°C or 170°C fan-forced.

  2. 2

    Beat butter with an electric mixer until smooth, add sugar and beat until light and fluffy.

  3. 3

    Add eggs and mix well.

  4. 4

    Add the sifted flour, milk and vanilla, beat until smooth.

  5. 5

    Place paper baking cases in a cupcake tin. Spoon in mixture until they are about 2/3 full.

  6. 6

    Recipe makes 24 cupcakes so you need to make two batches.

  7. 7

    Bake for 20 minutes until golden.

  8. 8

    Turn out onto a wire rack to cool while you prepare the icing.

  9. 9

    BUTTERCREAM ICING
    Beat the butter until it is pale and fluffy.

    Sift in the icing sugar

  11. 11

    Add the vanilla essence and milk until you have a light and fluffy mixture.

  12. 12

    Add extra milk if you need a softer consistency.

  13. 13

    Spread or pipe icing over cupcakes and top with decorations required.
