Ingredients

  1. 2 largefirm apples (honeycrisp recommended)
  2. cinnamon pecan date oatmeal
  3. 1 cuprolled oats
  4. 4Medjool dates (pitted)
  5. 1/4 tspground nutmeg
  6. 1 tspcinnamon
  7. 1 tbspchia seeds or ground flax (optional)
  8. 1/4 cuppecans (chopped)
  9. 1 1/2 cupalmond milk
  10. 1 tspvanilla extract
  11. 1 1/2 tbspmaple syrup (and more for garnish)

Cooking Instructions

    Preheat oven to 350°F.

    Wash and core apples with the hole about an inch in diameter.

  3. 3

    Put apples in a lightly oiled and rimmed baking dish.

  4. 4

    Whisk all the ingredients for the oatmeal in a mixing bowl.

  5. 5

    Lightly pat down oatmeal into the apples as stuffing and pour all the leftovers from the bowl into the dish surrounding the apples.

  6. 6

    Bake for 35-50 minutes depending on how soft you want the apples. Test for texture by poking the apples with a knife.

  7. 7

    Serve hot or cold and add toppings such as a drizzle of maple syrup, apple butter, whipped cream, or ice cream.

This looks delish and I plan to serve this to DH next week. The only sub I'll make is to use date syrup instead of maple. Yum!
