Ingredients

  • 1Container Cherry Tomatoes, cut in half
  • 1 cartonfresh mozzarella cheese pearls, drained
  • 1Avocado
  • 1/3 cupBasil, julienned
  • 2 tbspFresh parsley
  • 1/4 cupLemon juice
  • 1/4 cupOlive oil
  • 1Salt & Pepper

Steps

  1. 1

    Combine tomatoes, mozzarella, basil & parsley. Set aside.

  2. 2

    In small bowl, whisk lemon juice, oil, salt & pepper. Pour over tomato mixture. Toss to coat.

  3. 3

    Cover & Refrigerate for 1 hour.

  4. 4

    Add in avocado just before serving.
