Ingredients

  • xương heo - thịt đùi heo (hoặc giò heo) - thịt cua - tôm
  • nấm rơm - hành lá và ngò rí có rể - bánh canh
  • 04củ hành khô - bột năng hay bot bắp - Dầu màu điều,
  • Muối, đường, bột nêm

Steps

    Ướp thịt cua với một muối và đầu hành lá băm nhuyễn. Phi nóng dầu màu điều cho thịt cua vào xào nhanh tay rồi trút thịt cua ra chén.

    Tiếp theo cho thịt đùi và xương heo vào xào cho săn. Cho nước lọc vào nồi nấu cùng với  xương và thịt vừa xào. Củ hành khô nướng sơ cho thơm thả vào. Trong quá trình hầm xương nước lèo nhớ vớt bọt để nước lèo được trong

    Khi thịt đùi chín mềm thì vớt ra trước, chần qua nước lạnh và thái miếng mỏng. Cho tôm vào nồi luộc chín và vớt ra, lột vỏ. Xếp sẵn thịt, tôm và hành vào dĩa để khi nào ăn sẽ cho vào tô bánh canh.

    Nêm nếm cho vừa ăn. Sau đó, thả bánh canh và nấm rơm vào nồi nước lèo đang sôi. Đảo đều cho bánh canh chín, phần bột áo ngoài cọng bánh canh làm cho nồi nước lèo hơi sệt lại.

    Muốn nồi nước lèo sánh hơn thì ta cho thêm bột năng pha cùng nước lạnh hoà từng ít vào nồi nước lèo đến khi thấy có độ sánh vừa ý, cọng bánh canh tự nổi lên là ok.
