Using string, slice the goat cheese into 1/4 inch thick medallions and place on serving tray.

Finely chop the garlic, olives and thyme into a bowl.

Mix in the vinegar, salt, and pepper. Stir until ingredients are well mixed.

Pour olive oil into the bow and mix well.

If you can afford the time, let the marinade sit for a minimum of 2 hours. Ideally 24 hours for best results.

Liberally spoon the marinade on top of the goat cheese.

Prepare the crostini bread slices to accompany the cheese.
