Ingredients

1 serving
  • 3 cupshredded carrots - packed
  • 2 cupflour - self rising
  • 2 cupsugar
  • 1/2 tspsalt
  • 2 tspbacking soda
  • 1 tspbaking powder
  • 2 tspcinnamon
  • 1 dashnutmeg
  • 4 eacheggs
  • 1 1/2 cupvegetable oil
  • 1 tspvanilla
  • 1cream cheese frosting
  • 12 ozcream cheese
  • 1/2 tspvanilla
  • 1 dashsalt
  • 1 tbspmilk
  • 2 cuppowdered sugar

    Mix flour, baking soda, baking powder, salt, nutmeg, and cinnamon

  2. 2

    Mix oil, sugar, and beat in one egg at a time beating after each. Then add 3 cups of shredded carrots and mix thoroughly.

    Stir in all dry ingredients and mix well.

  4. 4

    Bake at 350 for 35-45 minutes. Check after 35 minutes. You don't want to over bake this.

  5. 5

    Cream Cheese Frosting

    12 oz phili cream cheese.
    2 cups of powdered sugar. 1 capful of vanilla
    dash of salt
    1 Tablespoon of Milk
    Blend til smooth!
