preheat oven to 400°

mix dry crust ingredients in a bowl

add flour mixture, butter and shortening to food processor

mix till lumpy

knead dough till its all mixed

wrap dough is plastic wrap and set aside to rest

skin and cut up apples removing seeds and stems put the pieces in a bowl with cold water and lemon juice

in separate bowl mix the sugar, brown sugar, flour, cinnamon and salt

add the apples to the mixture and coat them

set them aside and start rolling out the pie crust first for the bottom layer

lay the crust in pie dish poke a few holes in the crust and arrange apple pieces neatly and evenly

pour in the remaining juices

roll out the top crust and lay over the apples then poke holes in the top

put aluminum foil around edges put pie on rimmed cookie sheet and place on bottom rack of oven

bake for 60 to 75 minutes looking for juices bubbling the last five minutes bake without aluminum foil

take out and let cool on cookie sheet for a few minutes then move to cooking rack
