  1. 1 tspOlive Oil
  2. 2Zucchinis, cubed
  3. 1 can( 29 oz )Crushed Tomato's
  4. 6 cupChicken Broth
  5. 1 cupFresh or Frozen Corn
  6. 1 1/2 tspCumin
  7. 1 tspCayenne Pepper
  8. 1Whole Rotisserie Chicken, meat pulled off and shredded, No skin

Cooking Instructions

    For serving : Tortilla Chips , Lime quarters , Avocado slices , Shredded Monterey Jack Cheese , Fresh Cilantro , Sour Cream

    Heat Oil in stockpot. Add Zucchini and sauté for 2 minutes. Add Crushed Tomato's , Chicken Broth, Corn , Cumin, Cayenne, and Shredded Chicken. Heat to a Boil. Add a Generous Squeeze of Lime to Soup. Top with Avocado slices, Cheese, Cilantro and a dollop of Sour Cream. Refrigerate any leftovers. Prep Time 10 minutes. Cook Time. 20 minutes
