I have been making egg mugs for years, then began to see recipes for omelet mugs. This is today's version. Ingredients

1 serving
  • 1 tspbutter
  • 1/4 cupfrozen black bean blend
  • dashchili powder
  • dashground cumin
  • 1/4 cupegg beaters (egg whites only)
  • 3 tbspbread (torn into small pieces)
  • 3 tbspchopped zucchini
  • 3 tbspchopped roma tomatoes
  • 3 tbspshredded sharp cheddar cheese
  • dashcracked pepper
  • 1 1/2 tspmilk

    Add beans, butter, chili and cumin to large, deep mug and microwave for 30 seconds

  2. 2

    IMPORTANT: DO NOT SKIP THIS STEP. Use paper towel to blot any excess moisture.

  3. 3

    Add all other ingredients and stir very well. Let sit for 30 seconds too let bread soak liquids, then stir again.

  4. 4

    Microwave on high 1 minute. Check to see if it iis set. Heat 30 seconds more, if needed. Use paper towel to blot extra moisture before serving
