Ingredients

  1. 1 tbspOlive oil
  2. 1 bunchGreen onions. Chopped.
  3. 1 cupRed cabbage
  4. 3/4 tspSea salt
  5. 1 cupQuinoa. Well drained and rinsed.
  6. 2 cupWater
  7. 1/4 cupCurrants. Dried.
  8. 1Lemon
  9. 2Zucchini
  10. 4 tbspSesame seeds
  11. 4 tbspDill. Fresh. Chopped. ->Substitute mint<-

Steps

  1. 1

    Quinoa- heat olive oil in pan. Over medium high heat.

  2. 2

    Add most of the green onions and salt. Cook until soft.

  3. 3

    Add quinoa. Cook for 5 minutes.

  4. 4

    Add water and currants. Increase temperature to boiling point.

  5. 5

    Lower the temperature to simmer. Cook for 15 minutes.

  6. 6

    Zest lemon into a small bowl. Juice the lemon (2 tablespoons/lemon).

  7. 7

    When quinoa is done. Remove from heat.

  8. 8

    Stir in zucchini, lemon zest, lemon juice, sesame seeds, dill.
