
Quinoa with Currant, Dill and Zucchini

Quinoa- heat olive oil in pan. Over medium high heat.

Add most of the green onions and salt. Cook until soft.

Add quinoa. Cook for 5 minutes.

Add water and currants. Increase temperature to boiling point.

Lower the temperature to simmer. Cook for 15 minutes.

Zest lemon into a small bowl. Juice the lemon (2 tablespoons/lemon).

When quinoa is done. Remove from heat.

Stir in zucchini, lemon zest, lemon juice, sesame seeds, dill.
