Quinoa Salad with Bell Peppers

Rinse the quinoa in cold water.

Bring water to boiling point. Add quinoa. Lower heat, cover and simmer for 15 minutes.

Spread the cooked grain in a shallow pan to cool.

Combing the cooled quinoa, bell peppers, scallions, cucumber, daikon, red cabbage, parsley and apricots in a bowl.

Add dressing (taragon and lemon) and toss to mix.

Add salt to taste.
