Ingredients

  1. 3 tbspOlive oil
  2. 3Shallots chopped
  3. 3 clovesGarlic crushed
  4. 1 inchfresh Ginger grated
  5. 2Chicken breast butterflied cut
  6. to tasteSalt & Pepper
  7. 100 gramsButton Mushrooms sliced thick
  8. 1/4 cupWhite wine
  9. 1 tbspBalsamic Vinegar
  10. 1/4 cupDouble Cream
  11. 1Chicken stock cube/bouillon
  12. 1/4 cupboiling water

    Ingredients

    Heat up the oil and add the chopped shallots to it and fry for 1minute

    Add the garlic and ginger together to the shallots and fry and stir for 2 minutes

    Add the mushrooms mix and stir for a few minutes. You may need to add a little more olive oil if it is dry, just a little and fry for 3-5 minutes

    Take out the mushroom mix and set it aside then in the same pan. Fry both sides of the chicken to brown it on both sides for about 5 minutes

    Take the chicken out and set aside. Then pour the wine into the pan and let it bubble for 2 minutes. Mix the stock with the water and pour into the wine and stir.

    Add the balsamic vinegar and mix in then add the mushrooms bring to the boil then lower the heat and place the chicken on top turn heat down to simmer and cover dish let it simmer for 10-15 mins

    Add Salt & Pepper stir it around then add the cream stirring gently. Leave to simmer for a further 5 minutes

    Add to serving plate with mash potatoes, chunky chips or roast potatoes or just some crispy vegetables.

Cookpad founder Member Ambassador, Also a Cookaholic.I love this Cookpad Site, Recipes, friends, interesting people and outstanding recipes, and able to see and to taste food from all over the world. i have learned so much more here, spices , herbs and lovely recipes of different cultures. also experimenting mixing different herbs and spices and making my own creations .I have cooked for my family since I was 14yrs, home from school as my Grandmother could no longer cook she was 91yrs, my Dad worked and there was only me so I learned quite quick and have always enjoyed it. I only started experimenting with herbs and spices and items I had never heard of before through joining Cookpad 2014 and I'm still learning new things. It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
