If you don't already have rice made, start rice.

Combine tomato, onion, and ginger in a food processor and blend to a paste.

Heat the oil in a sauce pan on medium heat. Add the spices and cook for 30 seconds or until fragrant. Add the paste and raisins and cook for another 2 minutes.

Stir in vegetables (try cauliflower, peas, carrots, potatoes), chickpeas and milk. Reduce to medium-low heat and simmer, adding salt and pepper if desired.

Serve over rice or by itself with naan.
