Ingredients

  1. 1 stickbutter
  2. 1 cupsugar
  3. 2 eacheggs
  4. 1/2 tsporange zest
  5. 1/2 tspvanilla
  6. 1 1/2 cupflour
  7. 1/2 tspbaking powder
  8. 1/2 tspcream of tartar
  9. 1/4 tspbaking soda
  10. 1/4 tspsalt
  11. 1/2 cupsour cream
  12. 1 1/3 cuprhubarb, finely diced
  13. 1/2 cupchopped walnuts (optional)

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, orange peel, and vanilla.

  3. 3

    In a separate bowl, combine the flour, baking powder, cream of tartar, baking soda, and salt; add to creamed mixture alternately with sour cream. Fold in rhubarb and walnuts.

  4. 4

    Transfer to two loaf pans coated with cooking spray and bake for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
