Start up with the Roast at room temperature. 3 hours

Preheat oven to 500°. Generously sprinkle season salt and Peppery over the Prime Rib.

Insert meat thermometer into thickest part of the Roast, making sure it doesn't touch a Bone.

After 15 minutes at 500°F, reduce the temperature to 325°. Cooking time should be about 13-15,minutes per point for rare, 15-17 per point for medium rare. Use a meat thermometer.
