Jack Fruit veggie in minty gravy

Jack fruit commonly known as Kathal in Hindi is a very underestimated veggy...But one must make it quite often owing to it's rich in proteins and iron content ...The seeds of th is veggy are equally tasty....here is my version of Jack fruit veggie...which is more or less a semi dry veggy infused in pudina coriander chutney....

Jack fruit commonly known as Kathal in Hindi is a very underestimated veggy...But one must make it quite often owing to it's rich in proteins and iron content ...The seeds of th is veggy are equally tasty....here is my version of Jack fruit veggie...which is more or less a semi dry veggy infused in pudina coriander chutney....
Steps

Wash the chopped chunks of Jack fruit and pat dry and shallow fry them.

Keep them aside.

Heat the oil in a wok..

Add ginger garlic paste and stir it till it's raw smell goes away.

Add chopped onions and saute then till transluscent...

Add chopped tomatoes and allow them to become tender.

Now add all spices..

Also add curd

Stir it throughly

Add Jack fruit chunks and also the mint chutney..

Add little water and adjust it's consistency

Now add salt..as addition of salt prior to addition of curd may sputter off the curd...

Cover it on a low flame for sometimes..

Open the lid...wow an aromat healthy veggie is ready

One can always enjoy this with plain paranthas or laccha paranthas...
