Seen this on a programme last week, this is my verdion. you can use any peel you like but must be more potato than other veg. You can use any spice at end for flavour. It's sorta like mushroom soup, a tad potato flavour but nice. I like this as I live mushrooms but allergic. No need for thickeners in this

Ingredients

30 mins
4 servings
  1. 15 mloil or butter for sautéing
  2. 396 gramswashed potato peel
  3. 117 gramswashed carrot peel
  4. 109 gramswashed parsnip peel
  5. 1onion, chopped & peeled or 2 pinches asafoetida if allergic to onions
  6. 500 mlMilk I used own homemade Almond milk
  7. 1vegetable cube
  8. 500 mlwater
  9. 1/8 tspsea salt
  10. 2 pinchblack pepper
  11. ground ginger to taste
  12. white pepper to taste
  13. optional
  14. 1grilled bacon on top when serving
  15. 1/4 tspground coriander
  16. 1 tbspdried parsley

Steps

30 mins
  1. 1

    Add oil to large pan and sauté onion if using and or asafoetida

    Add all peels and sauté until soft, keep stirring around to get oil on.

    Remove from the heat and cool a little

  4. 4

    Add hot water to jug and mix in stock cube

    Add stock from step 4 & milk to peels with salt and pepper

    Bring to the boil then reduce the heat and simmer for approximately 10 minutes until peels are tender and soft.

    Cool the soup the puree with a stick blender then stir in the parsley, add coriander or own spices now to taste

    Serve immediately with crispy bacon pieces or on its own, or put in containers, lid and keep in the fridge.
