  3. 1 cupwhite wine vinegar
  4. 1sugar
  5. 1salt

  1. 1

    peel, rough chop, and shock carrots in boiling water 3-4 minutes. Immediately, chill carrots in ice bath.

  2. 2

    Mince Habanero pepper. No stems, no seeds, no ribs.

  3. 3

    Blend all ingredients until smooth. Sugar to Salt ratio 1 to 0.25.

  4. 4

    Pour blended Carrot-Habanero through sieve to removed unwanted particulates.
