Guacamole Quiche
Delicious!
Steps
- 1
Preheat your oven to 350°F
- 2
If you're using a frozen pre-made pie shell: take it out of the freezer, set it on a baking sheet at room temperature to thaw for 10 mins.
- 3
In a bowl, combine eggs, milk and whisk together.
- 4
Cut the avocado in half length-wise, take out the pit and gently cut the flesh into a grid of cubes 1" wide or smaller. Be careful not to cut through the outside skin/shell. Push the shell inside out to open the grid, scrape the cubes into the pie shell.
- 5
Sprinkle the seasoning evenly over the avocado
- 6
Pour the egg mixture over the avocado, being careful not to over fill the pie shell.
- 7
Tip: Any extra liquid can be put into a ramikin and cooked as a mini quiche!
- 8
Bake for 35-40 mins, or until a knife inserted near the center comes out clean.
- 9
Let stand for 5-10 mins, serve with salsa!
