Chinese vegetable soup

Chop the veg up. Make sure the carrots and ginger are nice and thin.

Cut the tofu in to cubes about 2cm squared.

Get a large pan and put around 1.5 litres of water in, along with the ginger. Keep on a medium high heat.

After a few minutes add the carrots and Chinese cabbage.

Then add in the salt and vegetable stock cubes and pepper then mix.

After about 10 minutes the vegetables soften, this is when you add the tofu.

The tofu won't need long, it just needs to warm through, (around 5 minutes) just before serving put in the spring onions and coriander, so that they don't overcook.
