  • Muffin
  • 9 ozbrown sugar
  • 3/4 ozgranulated sugar
  • 10 ozbread flour
  • 2 ozquick oats
  • 1/2 tspbaking powder
  • 1/2 tspbaking soda
  • 1/2 tspcinnamon
  • 1 tspsalt
  • 4eggs
  • 2 tsplemon zest
  • 1/2 tspvanilla extract
  • 8 ozmango cubes
  • 5 ozvegetable oil
  • 3 ozmango puree
  • Streusel (if desired)
  • 4 ozbrown sugar
  • 4 ozgranulated sugar
  • 12 ozall-purpose flour
  • 8 ozbutter
  • 1/2 tspcinnamon
  • 1 pinchsalt

Steps

  1. 1

    For better results work with all liquid ingredients at room temperature (e.g. eggs, butter, etc.)

  2. 2

    Mix all dry ingredients together (e.g. brown sugar, granulated sugar, bread flour, quick oats, etc.)

  3. 3

    Mix all liquid ingredients together (e.g. oil, mango puree, eggs, etc.)

  4. 4

    Incorporate liquid mix into dry ingredients. Add lemon zest and diced mangos

  5. 5

    Pour batter into greased muffin pan (3/4 full).

  6. 6

    For streusel: Mix all indicated ingredients until crumble (preffered by hand)

  7. 7

    Add streusel topping if desired.

  8. 8

    Bake on preheated oven at 400°F for 15 minutes
