Ingredients

  • 1 lbRaw shrimp
  • 1/2 cupShredded sweet coconut
  • 1/2 cupPanko bread crumbs
  • 1 largeEgg
  • 1 pinchSalt
  • 1/2 cupApricot preserves
  • 1 tbspRice wine vinegar
  • 3/4 tspCrushed red pepper flakes

Steps

  1. 1

    Preheat oven to 425. Grease baking sheet.

  2. 2

    Combine coconut flakes, Panko bread crumbs, and Salt in a bowl place flour on a small dish. Whisk egg in another bowl

  3. 3

    Lightly season shrimp with salt. Dip the shrimp in flour. Shake off excess. Coat with egg. Coat with coconut crumb mixture.

  4. 4

    Lay shrimp on sheet. Spray shrimp with cooking spray. Bake for 10 mins. Turn shrimp an bake for 7 mins.

  5. 5

    Combine apricot preserves, rice vinegar and red pepper for sauce
