
Sweet & Sour Hawaiian Meatballs

Combine meatballs, pineapple chunks, and green pepper in a large pot.

Whisk together 1 cup of pineapple juice, soy sauce, vinegar, brown sugar, and cornstarch until the sugar and cornstarch are completely dissolved.

Pour mixture over meatballs and stir.

Turn heat to medium-high and cover

Let simmer for 11-15 minutes, or until sauce thickens and meatballs are hot all the way through. Stir occasionally.

Serve over cauliflower rice, quinoa, rice, whatever you'd like!
