Ingredients

4 servings
  • 1 lbflounder, sole, or other delicate fish, about 3/4" thick
  • 1/2 tsppaprika
  • 1/2 tspsalt
  • 1/4 tspground black pepper
  • 1 tbspbutter
  • 1/2 cupmushrooms, sliced
  • 1/3 cupleeks, thinly sliced
  • 1/3 cupdry white wine or chicken broth
  • 1/4 cupsliced almonds
  • 1 tbspgrated parmesan cheese

  1. 1

    Heat oven to 375°F.

  2. 2

    If fish filets are large, cut into 4 pieces. Arrange in a ungreased 8x8x2" baking dish. Sprinkle with paprika, salt, and pepper.

  3. 3

    Melt butter in a 10" skillet. Saute mushrooms and leeks in the butter until the leeks are tender. Remove from heat and pour in thve wine. Pour mixture over the fish. Top with almonds and parmesan.

    Bake uncovered for 20 min. Serve immediately.
