Preheat oven to 180 celcius

Cook chicken in a non stick fry pan until just cook... Set aside chicken to rest for 5 minutes

In a bowl sift the flour, baking soda and powder and stir to combine

In a separate bowl, whisk the eggs and milk together

In another bowl , cream the cheese and cocoa butter together

Combine the cheese mix and egg mix, stirring til smooth

Dice the chicken into 2cm cubes, setting aside again

Pour combined egg & cheese mixture into flour mix, and gently fold in, making sure there's no lumps

Stir in the baby spinach, grated cheese and diced chicken

Spoon into 12-cup muffin tray

Place in oven and bake for 15mins or until ready (poke tested clean)

Let sit for 5mins then serve

Can freeze in zip lock bags
