Ingredients

  1. cheese sauce
  2. 3/4 cupRaw cashews
  3. 1/2 cupQuick oats
  4. 1 cupRaw sunflower seeds
  5. 1 cupNutritional yeast
  6. 2 tbspCorn starch
  7. 2 tspDry mustard
  8. 1 1/2 tspGarlic powder
  9. 1 1/2 tspOnion powder
  10. 2 tspSea salt
  11. 1 tspPaprika
  12. 1Fresh ground pepper
  13. pasta
  14. 1 1/2 cupRotini pasta
  15. 5 largeCremini mushrooms
  16. 2/3 cupSteamed sweet peas
  17. 1 cupCheese sauce
  18. 1 tspGarlic powder
  19. 1 tspPaprika
  20. 1 1/2 tbspEarth balance

Steps

  1. 1

    In a food processor, place cashews, oats and sunflower seeds and process until mixture is finely ground. Add the rest of the ingredients to the nut/seed mixture until well combined.

    In a saucepan over medium heat, whisk together 2 parts dry mix with 1 part soy milk or water. Whisk often to avoid clumps.

  3. 3

    Boil pasta al dente. Drain but don't rinse.
    Mix in 1 tbsp earth balance

  4. 4

    Slice mushrooms and sauté with 1/2 tbsp margarine, garlic powder, paprika and salt and pepper.
    Add mushrooms and sweet peas to the cooked pasta and mix together.

  5. 5

    Bake for 25-30 minutes at 350°F.
    Top with fried onions.
