1 1/2Orzo
1 dashblack pepper
1 dashoregano
1 pinchsalt
1 tbspolive oil
1/2 smallonion chopped
1carrot chopped small size
1eggplant chopped bite size
2tomatoes chopped bite size
1 clovegarlic diced

put skillet on medium heat

add olive oil and onion. cook for 2 minutes

add the rest of the veggies and spices. till all veggies are nice and tender
4

while that is cooking. cook Orzo according to the directions
5

once the orzo is done mix it in with the veggies
6

serve while hot
