  1. octopus
  2. 1 mediumoctopus
  3. 100 mlbalsamic vinegar
  4. 2 tbspbrown sugar
  5. 1 pinchsalt
  6. grilled potato chips
  7. 1/4 kgpotatoes
  8. 1 tspolive oil
  9. 1 pinchsalt
  10. TOASTED BREAD SEASONED WITH GARLIC AND PARSLEY
  11. 2 sliceBread
  12. 1 bunchground garlic
  13. 1 tbspolive oil

Steps

  1. 1

    cook the octopus with water and salt for 30 min and reduce the sauce.

  2. 2

    meanwhile put the vinegar and the sugar in a pot. Reduce it using mild fire and continously stiring.

  3. 3

    when the octopus is cooked let it cool down.

  4. 4

    cut the mollusk in small pieces

  5. 5

    (if you decide to male the potatoes, do this step when are almost baked) heat up the octopus with his sauce and half of the vinegar sauce and reduce them.

    when is hot, serve it in a white plate and decorate the octopus (the bread and the potatoes chips) with the remaning vinegar sauce using a spoon to draw line or whatever you like.

    GRILLED POTATO CHIPS

    cut the potatoes

  9. 9

    using a grill or a grill for the kitchen cooker, cook the chips with the oil. during this process pour on them some spoon of water to mantein the potatoes soft.

    CROSTINI = TOASTED BREAD

    seasoned the slice of bread with parsley and garlic for 30 min

    put a little bit of olive oil on it and grill it
