Ingredients

  1. 1 tbspoil
  2. 1 cupdiced onion
  3. 4 cloveminced garlic
  4. 1minced Serrano chile
  5. 1 tspground cumin
  6. 1/2 tspground black pepper
  7. 1/2 tspsalt
  8. 2diced tomatoes
  9. 1cubed medium Yukon Gold potato
  10. 8 cupvegetable broth
  11. 1 cupyellow corn kernels
  12. 1 cupdicedred bell pepper
  13. 3/4 cupquinoa
  14. 1/4 cupchopped parsley
  15. 2 tbspchopped cilantro
  16. 2 tbsplime juice

Steps

    Heat oil in soup pot over medium heat

  2. 2

    Add onion and cook until soft, about 10 minutes.

  3. 3

    Add garlic, Serrano chile, cumin, black pepper, and salt.

  4. 4

    Cook until fragrant, 1 to 2 minutes.

  5. 5

    Add tomatoes, potatoes and broth.

  6. 6

    Cook over medium to medium low heat, until potato is soft, about 40 minutes.

  7. 7

    Add corn, bell peppr and quinoa.

  8. 8

    Cook, stirring occasionally, until quinoa begins to soften, about 8 minutes.

  9. 9

    Add parsley, cilantro and lime juice just before serving.
