Ingredients

  • 2Eggs
  • 1Salt & Pepper
  • 1Grated cheese of choice
  • 2 cupFresh raw spinach
  • 1/2 mediumYellow squash
  • 3/4 cupBaby grape tomatoes fresh
  • 1/3 cupWater

Steps

    Rinse all vegetables. Slice yellow squash into round slices. Cut tomatoes in half.

  2. 2

    Add water to a pan and turn stove onto medium. Place spinach in the pan on the stove. Cover with lid to steam the spinach.

  3. 3

    While the spinach is cooking, crack the two eggs into another pan (careful not to stir the yolks) and turn the stove onto medium-high. Add salt and pepper. Cover with a lid.

  4. 4

    Now add your sliced squash and tomatoes to the spinach and stir the mix together. Cover back up. Continue cooking for 5 more minutes, stirring occasionally.

    Once you are done adding the vegetables to the spinach, your eggs should have a thin white film over the yolk. Carefully use a spatula to remove the eggs from the pan and place onto a plate.

  6. 6

    Once the spinach has wilted and the vegetables are steaming, place onto a plate. Drain any excess water.

  7. 7

    Then your dish is ready! Season to your liking.
