Add onions and celery and sauté.

Add oregano and bay leaf.

Remove offal and let cool.

Add chicken stock to pan and bring to a boil.

In a baking pan, arrange challah and olives.

Top with turkey offal and stock mixture.

Bake at 350 for about an hour.
