Ingredients

  • 12mini sweet peppers
  • 1/2 cupgoat cheese, softened at room temperature
  • 1herbs and spices (e.g. parsley, oregano, red pepper flakes)
  • 1black pepper
  • 1salt
  • 1olive oil

    Preheat oven to 400° F

  2. 2

    Cut peppers in half and pull out membranes and seeds

  3. 3

    Put peppers on a baking sheet and drizzle a little olive oil over them, sprinkle with salt and pepper. Mix well so every pepper is coated

  4. 4

    Mix cheese and spices until well combined. I used several pinches of dried parsley, and a couple pinches each of oregano and red pepper flakes. As well as a few grinds of black pepper

  5. 5

    Add small amount of cheese to each pepper. Press down with your fingers as you fill them so it gets in all the nooks and crannies

  6. 6

    Pop them in the oven for 15 to 20 minutes, or until the peppers start to soften and wrinkle. The cheese should be beginning to brown as well as the bottom of the peppers

  7. 7

    Eat while hot!
