preheat over to roast brinjal

chop onions/ shallots

chop chillies

pound the garlic cloves roughly

now heat one teaspoon of mustard oil in a pan

chop plum tomatoes

before it gets heated start adding chopped onions, green chillies, pounded garlic and start saute

now untl it all turns golden, peel off the roasted brinjal and mash it up with a pinch of salt and few drops of mustard oil

add the mashed brinjal to the fried

add tomatoes, cover and cook

after 3 mins, add the garam masala and keep stirring

now add the half cup coconut milk to the pan

let it simmer, cover it all

now add salt to taste and cover it until the coconut milk is all absorbed

to garnish u can use either coriander leaves or fry curry leaves in ghee and add
