4 ozpimento, drained
8 ozgrated cheddar cheese
2 ozsoftened cream cheese
3 tbspmayonaise
1 tspcrushed red pepper flakes
1/2 tsplemon juice
4 largeflour tortillas
1baby spinch leaves

Mix all ingredients together and season with salt and pepper to taste.

Spread about 1/2 cup of cheese mix on each tortilla. Leave about 1/4 of the tortilla uncovered.

Layer spinach leaves on top of cheese.

Wrap tortilla into cylinder and slice or wrap in wax paper and refrigerate until ready for use.
