Ingredients

2 largecarrots, peeled and sliced about 1/2 inch thick
2 largebell peppers, cut into 1/2 inch chunks
3 clovegarlic, finely minced
4 eachboneless chicken breasts, cut in to bite size pieces
2 tspground ginger
1 tspsalt
1/2 tsppepper
8 ozfrozen orange juice
2 cuporange slices or mandarin oranges * optional
2 eachgreen onions, chopped
3 cupcooked rice

Steps

Put carrots, bell peppers, garlic, then chicken, ginger, salt & pepper and frozen orange juice in crock pot.

Cover and cook on low for 4-6 hours.

Serve on hot rice.

Top with orange slices and green onions.

Serve leftover liquid on the side if desired.
