Ingredients

  1. 2 largecarrots, peeled and sliced about 1/2 inch thick
  2. 2 largebell peppers, cut into 1/2 inch chunks
  3. 3 clovegarlic, finely minced
  4. 4 eachboneless chicken breasts, cut in to bite size pieces
  5. 2 tspground ginger
  6. 1 tspsalt
  7. 1/2 tsppepper
  8. 8 ozfrozen orange juice
  9. 2 cuporange slices or mandarin oranges * optional
  10. 2 eachgreen onions, chopped
  11. 3 cupcooked rice

Cooking Instructions

  1. 1

    Put carrots, bell peppers, garlic, then chicken, ginger, salt & pepper and frozen orange juice in crock pot.

    Cover and cook on low for 4-6 hours.

  3. 3

    Serve on hot rice.

  4. 4

    Top with orange slices and green onions.

  5. 5

    Serve leftover liquid on the side if desired.
