Ingredients

  • 2 largecarrots, peeled and sliced about 1/2 inch thick
  • 2 largebell peppers, cut into 1/2 inch chunks
  • 3 clovegarlic, finely minced
  • 4 eachboneless chicken breasts, cut in to bite size pieces
  • 2 tspground ginger
  • 1 tspsalt
  • 1/2 tsppepper
  • 8 ozfrozen orange juice
  • 2 cuporange slices or mandarin oranges * optional
  • 2 eachgreen onions, chopped
  • 3 cupcooked rice

Steps

  1. 1

    Put carrots, bell peppers, garlic, then chicken, ginger, salt & pepper and frozen orange juice in crock pot.

  2. 2

    Cover and cook on low for 4-6 hours.

  3. 3

    Serve on hot rice.

  4. 4

    Top with orange slices and green onions.

  5. 5

    Serve leftover liquid on the side if desired.
