Ingredients

2 servings
  1. 1 tbspolive oil
  2. 2chicken breasts
  3. 2chicken breasts, sliced
  4. 2garlic cloves crushed
  5. 115 grams(4oz) chorizo sausage, sliced
  6. 1red pepper, sliced
  7. 1courgette, sliced
  8. 400 gramscan chopped tomatoes
  9. 150 ml(¼pt) double-strength chicken stock
  10. 1 tspsugar
  11. 1 tspground paprika
  12. 2 tbspbasil, chopped, plus extra to serve
  13. 55 grams(2oz) black olives

Steps

  1. 1

    Heat the oil in a wok. Add the chicken, garlic and chorizo. Stir-fry for 2 to 3 minutes. Toss in the red pepper and courgette, then stir-fry for a few more minutes.

    Stir in the chopped tomatoes, stock, sugar and ground paprika, basil and olives, then simmer for a while minutes until the vegetables are just tender.

    Scatter with basil leaves and serve.Suitable for freezing.

    Serve with rice or add a 410g can of beans to create a one-pot meal.
