Place all the ingredients in a food processor and pulse until the mixture forms a coarse paste, but not completely smooth. You don't want it to turn into a puree.

Transfer the mixture to a bowl and mix lightly with a fork, checking for any large pieces and removing them.

Cover the bowl and refrigerate for 2-3 hours.

Take out the mixture and shape it into small patties. A special falafel scoop can help, but shaping by hand works just fine.

If the patties seem to fall apart, add a little more flour, but not too much. They will stick together as they fry.

Heat plenty of oil in a deep skillet. Fry the patties until they are golden brown, about 2-3 minutes per side. They should cook for a total of 5-6 minutes. If they cook faster, lower the heat a bit.
