Ingredients

Makes 40+ patties
  1. 1 lbsoaked chickpeas, well drained (about 500 grams)
  2. 1medium onion
  3. 3 clovesgarlic (or more if you like)
  4. 1/2 cupchopped parsley (about 15 grams)
  5. 2 tablespoonsall-purpose flour or chickpea flour (about 16 grams)
  6. 1 teaspoonbaking powder
  7. 2 teaspoonssalt
  8. 2 teaspoonsground cumin
  9. 1 teaspoonground coriander
  10. 1/2 teaspoonblack pepper
  11. 1/4 teaspooncayenne pepper
  12. 1 pinchground cardamom
  13. Sunflower oil or corn oil for frying

Steps

  1. 1

    Place all the ingredients in a food processor and pulse until the mixture forms a coarse paste, but not completely smooth. You don't want it to turn into a puree.

    Transfer the mixture to a bowl and mix lightly with a fork, checking for any large pieces and removing them.

  3. 3

    Cover the bowl and refrigerate for 2-3 hours.

  4. 4

    Take out the mixture and shape it into small patties. A special falafel scoop can help, but shaping by hand works just fine.

  5. 5

    If the patties seem to fall apart, add a little more flour, but not too much. They will stick together as they fry.

  6. 6

    Heat plenty of oil in a deep skillet. Fry the patties until they are golden brown, about 2-3 minutes per side. They should cook for a total of 5-6 minutes. If they cook faster, lower the heat a bit.
