Ingredients

  1. 1Portabella mushroom per person
  2. 1 cupDiced ham pieces per mushroom, omit if vegetarian
  3. 1 cupDiced avocado per mushroom
  4. 1 cupDiced tomatoes per mushroom
  5. 1 tbspDiced onion per mushroom
  6. 1/2 cupShredded cheese per mushroom
  7. 1 tbspOlive oil for brushing mushrooms
  8. 1/4 cupArugula or Spinach per mushroom

Cooking Instructions

    Wash each mushroom thoroughly and cut the stem. Turn over to dry on paper towel.

    Diced the following ingredients and set aside individually: avocado, tomatoes, onions.

    Put diced ham in skillet with the olive oil. Fry ham and add diced onions until ham is light brown and onions are translucent. Remove from heat and set aside. If vegetarian, simply cook onions.

    On greased cookie sheet place mushroom as shown in image. Brush mushroom with olive oil on both sides. Place ham onion mixture on top of mushroom. Top with shredded cheese and bake at 325?F for 20 minutes.

    Remove mushroom and place on plate, top with diced avocado and tomatoes. Can add either arugula or spinach immediately upon removal from oven.

    Serve and enjoy.
