Ingredients

  1. 6 largeeggs
  2. 3/4 cupmilk
  3. 2 tbspolive oil
  4. 1 bunchred swiss chard, stems separated from leaves, all rough chopped
  5. 1/2roasted red pepper, chopped
  6. 1onion, chopped
  7. 1salt and pepper
  8. 3 ozswiss cheese, grated

Steps

  1. 1

    Preheat oven to 375°F

  2. 2

    Heat 1 tablespoon oil in 10" saute pan, over medium heat

  3. 3

    Add swiss chard stems, saute until almost tender

    Add swiss chard leaves, saute until leaves are wilted and stems are tender, remove from pan, place in bowl

    Add onion to pan, saute until translucent and tender, remove from pan, place in bowl

    Add peppers to bowl

  7. 7

    In separate bowl whisk eggs, milk and salt and pepper to taste

    Add egg mixture to vegetables, combine

  9. 9

    Add cheese, combine

  10. 10

    Over low heat, add 1 tablespoon oil to the 10" pan

  11. 11

    Pour entire mixture into pan, cook until bottom is set, about 5 minutes

  12. 12

    Place pan in oven, cook until set, about 15-20 minutes

frittata is a completely different dish than an omelet. you bake it like a pie or quiche.
